Dear Houston
Cold-pressed juice being poured into glasses at an event

The Press Bar

Pressed at dawn. Poured at your table.

The Press Bar by Dear Houston brings raw, cold-pressed juice to your event. Chef Pat presses it in The Still Room the morning of, and we pour it that day, for your guests only.

The Still Room

The quiet room behind the bar.

Before the kitchen fires a single burner, there's a room that works without flame. Produce goes into the press whole and comes out as juice under pressure alone. Nothing is cooked, nothing is stored, nothing is pressed for a stranger. On the morning of your event, the press runs for you.

Method

A heavy press breaks down the cell walls of the fruit and greens. No heat touches it, so what reaches the glass tastes like the produce did that morning.

Four standing pressings, each a letter to a corner of the city: a park, a tree, a bayou and a trail.

Three ways to pour.

Every Press Bar is pressed the morning of and priced per guest. Choose how it reaches the room.

Questions, answered.

Yes. Never heated, never pasteurized. That's why it tastes like this, and why it may not suit pregnant guests, young children, older adults or anyone with a weakened immune system. Every menu card says so.
