Letter No. 02December 2026Edition of fortyHouston, Texas

One dish. Forty trays. Once a month.

Every month Chef Pat writes Houston a letter you can eat. A single dish, cooked once, numbered and signed. When the trays are gone, the letter's closed. This is December's.

Drop Day · Fri, Dec 4. Mailing list 10 AM. Everyone 12 PM. Edition of 40. Collect Sat, Dec 12

Dear Houston,

Christmas Eve didn't end at midnight. It started there.

In Lafayette, after midnight Mass, families came home to Réveillon, a late feast that kept the house lit until morning. A pot of gumbo was always on the stove, the roux stirred slow until it went dark, the shrimp and crab going in at the end.

That's what Christmas smells like to me. I trained in New York. I chose Houston. This December, I'm sending that pot to you.

Forty trays, each one numbered, each card signed by my hand. Set your table. Stay up late with it.
