Soup is the slowest form of correspondence. Every other dish the kitchen sends is a quick note — written, sent, read by noon. The pot is different. It began before anyone arrived, with a roux. You don't rush a letter like that. You stir it.

Chef Pat learned this from the roux — the first slow thing the kitchen does, and the one that decides everything after. You commit the night before. You set the oil and flour in the dark, low heat, and you stir — constant, patient, the color moving from pale to peanut to dark brown. The trinity follows: onion, celery, bell pepper, sweated into the dark. Then the stock marries in — the long-simmered shrimp stock, the andouille, the okra — and the pot stirs through the rest of the morning while the kitchen around it catches fire with the day's other work.
