Chef Pat — Louisiana-rooted, classically trained, built for Houston — decides which buildings his food reaches. The Board is how that decision gets made.
This city has always known how to cook. Houston will feed you in Vietnamese and Salvadoran and Nigerian and Creole, sometimes on the same block. The abundance has always been here. What it never figured out was how to bring that into the buildings.
Chef Pat grew up in Louisiana, which means he grew up understanding that food is not a transaction. You don't order a meal — you receive one. Someone decided what you needed before you knew you were hungry. He came to Houston because the city felt honest. Still becoming. Room for something real that hadn't been built yet.
The people inside those towers — the ones who get there early and leave late, who hold more together than their title suggests — they've been eating sad food from sad apps and calling it lunch. That bothered him. It bothers us.
The Drop is what we built in response. One menu. One day. Select buildings. Chef Pat decides what goes in it. You decide if your building is ready for it.
The Board is the name we gave to the people who make that decision. It is small by design. It is personal by necessity. If you are reading this, someone thought of you. That is not a coincidence.
